Carrot and Raisin Salad

Yield: 4 servings

 

Ingredients:

~ 1 pound (organic if possible) carrots, grated

~ 2/3 cup raisins (no sugar added)

~ 1 1/2 cups orange juice (freshly squeezed if possible)

~ 1 tablespoon freshly grated ginger root

 

Directions:

 1. Soak raisins in orange juice for 1 hour (overnight is fine).

 2. Mix all ingredients in a bowl and marinate for 1 hour or overnight.
